We love this quick and easy Weight Watchers friendly Egg Salad recipe.
  • 12 eggs, hard boiled, cooled, and chopped
  • ½ cup plain, non fat greek yogurt
  • (optional - 2 T light Miracle Whip or Mayo)
  • 1 large pickle, chopped
  • 1 squirt mustard
  • Salt and Pepper to taste
  1. Mix it all together.
  2. Serve with carrots, celery, and cucumber slices, or on top of lettuce, or light whole wheat bread.
