Directions: Peel, core, and chop 4 of the apples into bite size pieces. Once chopped, add 3T brown sugar and some cinnamon. In a large mixing bowl, combine flour, sugar, baking powder, salt, egg, milk and applesauce. Mix until combined. Do not over mix. Add chopped apples and stir gently. On a griddle or skillet, make into pancakes.
In a sauce pan, melt the butter on a med/low heat. Peel the remaining 4 apples, core and slice. Once butter is melted add remaining brown sugar (1/2c), apples, and some cinnamon to taste. Stir until brown sugar dissolves and makes a sauce. Make sure apples are completely coated. Add to the top of pancakes. Enjoy!
