We love this quick and easy Weight Watchers friendly Egg Salad recipe.

Ingredients

  • 12 eggs hard boiled, cooled, and chopped
  • 1/2 cup plain non fat greek yogurt
  • optional - 2 T light Miracle Whip or Mayo
  • 1 large pickle chopped
  • 1 squirt mustard
  • Salt and Pepper to taste

Instructions

  • Mix it all together.
  • Serve with carrots, celery, and cucumber slices, or on top of lettuce, or light whole wheat bread.
