10cupssalad greens1 bag
1pearpeeled and diced
2ozpomegranate seeds
4Tbspdry-roasted sunflower seeds
2ozgoat cheese
2chicken breastsgrilled or pan-fried with salt and pepper, sliced
6Tbspextra virgin olive oil
2Tbspred wine vinegar
1Tbsphoney
1cupcherriesthawed if frozen
1Tlime juicejuice from 1 lime
Instructions
To make dressing:
Place cherries in a food processor or blender and blend until smooth.
Add olive oil, red wine vinegar, honey, and lime and blend until smooth.
To make salad:
Divide spring mix evenly into 4 large salad bowls.
Top with goat cheese, sunflower seeds, pear, and chicken breast.
