Cinnamon Pumpkin Waffles

Ingredients

all purpose flour

cup
cornstarch

baking powder

salt

eggs
separated
1
can pumpkin
14 oz
1/4
cup
brown sugar

tsp
cinnamon
1/2
tsp
nutmeg
1¾
cups
milk
½
t
vanilla extract
½
cup
1 stick butter, melted
Instructions
In a large bowl, mix together flour, cornstarch, baking powder and salt. Set aside.
In a smaller bowl, beat egg whites with a mixer until soft peaks form. Add sugar, spices and continue beating until stiff peaks form. Set aside.
Whisk together egg yolks, pumpkin, milk, and vanilla.
Add egg yolk mixture to the flour and mix thoroughly.
Gently fold in the egg white mixture.
Mixture should be completely combined, but still lumpy.
Cook according to your waffle iron's directions.
