This classic, taste-of-home recipe for turkey noodle soup is wonderful for using left-over Thanksgiving or Christmas turkey, but works equally well with a store-bought rotisserie chicken.

Ingredients
2cupsturkey or chickenchopped. Use chicken or turkey breast for the lowest WW points.
6-8cupsturkey or chicken brothhomemade, or use 4 cans
2cupschopped onion
2cupschopped celery
2cupschopped carrots
1tspoilor cooking spray
2tsppoultry seasoning
2tspseason salt
1dashpepper
12ouncebag egg noodlesIf you can find them, frozen egg noodles are amazing in this recipe, but dry noodles work well, too.
Instructions
Stove-Top Instructions
In a large stock pot, cook onion, celery, and carrots in oil until soft but not browned. (About 10 minutes on medium heat.)
Add broth and bring to a boil.
Turn down to a simmer. Add spices. Cook 20 - 60 minutes to allow flavors to blend.
Add egg noodles according to package instructions (about 10-15 minutes), adding more broth or water if needed.
When noodles are done, add cooked turkey or chicken.
Simmer an additional 10 minutes, then serve.
Slow Cooker Instructions
Add all ingredients except for noodles into slow cooker. (You can leave out the oil. It's not needed for the crock pot cooking method.)
Cook for 6-8 hours on LOW heat.
Turn heat up to HIGH. Add noodles. Cook for 15-20 minutes more, or until noodles are soft but not falling apart. Stir and serve.
Instant Pot Instructions
Plug in the Instant pot and push the "Saute" button. In the inner chamber, cook onion, celery, and carrots in 1 tsp oil until soft but not browned. (About 6 minutes.)
Use a spoon to scrape off any bits of vegetables that are stuck to the bottom of the pot. (If food is stuck to the bottom, it may not come to pressure.)
Add all other ingredients except noodles.
Put the lid on, seal, and push the "Soup" button. Cook for 8 minutes. (Note: Actual time will be longer because it will take a few minutes to come to pressure.) When done, quick release and carefully remove lid.
Push the "Saute" button and add noodles. Cook until noodles are done, about 10 minutes. Stir and serve.
