Peel potatoes if desired. Dice into medium-sized chunks. Add to a large pot and fill with water until potatoes are covered. Boil until a fork easily pierces through the potato pieces. Drain.
In a large bowl, add potatoes and mash with a fork or potato masher.
Stir in remaining ingredients. Serve and enjoy. (These taste even better the next day!)
