This easy recipe is a healthy option for Taco Tuesday. There are only 4 ingredients, and it takes around 30 minutes to cook. Reader Sarah C says, "My family loves it! I was told, 'This does not taste like diet food.'"
1pound 93% lean ground turkeyCan substitute with 99% lean turkey, ground beef, or ground chicken
1packageTaco seasoningUse low-sodium or add your own spices for more control
4cupsfinely chopped cauliflowerfresh or frozen (I use cauliflower rice, 4 cups)
1cupsalsa
½cupwater
1candrained beans or cornoptional
1Tbspchopped cilantrooptional
Instructions
Prepare the cauliflower by chopping it into large chunks if using fresh. Use a cheese grater, food processor, or blender to finely grate it into 4 cups of cauliflower rice. If using frozen cauliflower rice, measure 4 cups and set aside.
Cook the ground turkey in a large skillet over medium heat, breaking it up with a spoon until fully browned.
Add the taco seasoning and cauliflower rice to the skillet. Stir well to combine with the cooked turkey.
Pour in the salsa and water, then stir until everything is evenly coated.
Cover and cook for 5 minutes, stirring occasionally, until the cauliflower is tender and flavors are blended.
Serve hot with your favorite toppings such as extra salsa, shredded cheese, avocado, or chopped cilantro. Enjoy!

I always have corn and flour tortillas, along with toppings such as: shredded cheese, chopped avocados, chopped tomatoes, jalapenos (fresh or jarred), Pico de Gallo, butter (for the tortillas), and chips with salsa. Chopped lettuce and onions could also be used as additional toppings. If there is any left and I am in a hurry, I just grab a flour tortilla and add some of the Taco Cauliflower Rice, shredded carrots, salsa, and avocado chunks, and I am off.Makes 4 servings. Each serving is 1 1/2 cups.
