Ingredients

chicken breast
cooked, cooled, and cut into cubes, approx 2.5 pounds of chicken

pecans
coarsely chopped

grapes
seedless, halved

Granny Smith apple
cored and diced

celery
diced

plain, non-fat Greek yogurt

Dijon mustard

juiced, or 3 Tablespoons lemon juice

Instructions
Gently stir all ingredients together until combined.
Refrigerate for at least two hours or until ready to serve.
Serve on a bed of lettuce, rolled up in collard greens or on low calorie bread or crackers.
