2Large Boneless skinless chicken breastscut into 2 inch pieces
1Large Zucchinihalved through the length and cut into 1 inch slices
1Red onioncut into 1 inch pieces
1/2PintGrape tomatoes
1 CloveGarlicMinced
2 TBSPRed Wine Vinegar
1LemonJuiced
1tspOreganodried
1/4CupOlive OilPlus 1 Tablespoon
1DashSaltto taste
1DashPepperto taste
Instructions
Place chicken in a medium-size bowl.
In a bowl or mason jar, mix together garlic, red wine vinegar, lemon juice, oregano, and ¼ cup olive oil.
Whisk (or shake) until blended.
Pour over chicken. Toss to coat. Marinate on the counter for 15 minutes or in the refrigerator for 2 hours to overnight.
When ready to cook, prep vegetables and toss in 1 tablespoon olive oil.
Sprinkle with salt and pepper.
Arrange cubed chicken breast, zucchini, onion, and grape tomatoes on wooden skewers (Note: Check to ensure skewers fit in the basket of your air fryer.)
Place kebabs in air fryer at 380 degrees for 15 to 18 minutes, carefully flipping halfway.
