Ingredients
- 2 Large Boneless skinless chicken breasts cut into 2 inch pieces
- 1 Large Zucchini halved through the length and cut into 1 inch slices
- 1 Red onion cut into 1 inch pieces
- 1/2 Pint Grape tomatoes
- 1 Clove Garlic Minced
- 2 TBSP Red Wine Vinegar
- 1 Lemon Juiced
- 1 tsp Oregano dried
- 1/4 Cup Olive Oil Plus 1 Tablespoon
- 1 Dash Salt to taste
- 1 Dash Pepper to taste
Instructions
- Place chicken in a medium-size bowl.
- In a bowl or mason jar, mix together garlic, red wine vinegar, lemon juice, oregano, and ¼ cup olive oil.
- Whisk (or shake) until blended.
- Pour over chicken. Toss to coat. Marinate on the counter for 15 minutes or in the refrigerator for 2 hours to overnight.
- When ready to cook, prep vegetables and toss in 1 tablespoon olive oil.
- Sprinkle with salt and pepper.
- Arrange cubed chicken breast, zucchini, onion, and grape tomatoes on wooden skewers (Note: Check to ensure skewers fit in the basket of your air fryer.)
