Ingredients
3eggs
3TbspSplenda, Stevia, or Monk Fruit powderoptional
1Tbspvanilla extract
3cupsplain, non-fat Greek yogurt1 large carton
1boxsugar-free pudding mixcheesecake or vanilla flavor, regular size (not the larger box)
Instructions
Pre-heat oven to 350℉ degrees. Spray pie dish with cooking spray and set aside.
In a large mixing bowl, add eggs, vanilla, and sweetener and beat with electric mixer until blended.
Add yogurt and pudding mix and beat until creamy and smooth.
Pour mixture into prepared pie dish.
Bake for 30 minutes or until firm throughout and set in the middle. This might take longer in your oven. The middle can be a bit jiggly but it should be set throughout. If it becomes too brown, cover lightly with foil.
Allow to cool. Then cover with plastic wrap and place in the fridge for at least 3 hours or overnight.
