In a small bowl, mix 1 Tbsp PB powder, 1 tsp low-sodium soy sauce, and 2 tsp water. Stir until smooth. Adjust water for desired consistency. Set aside.
Place 1 cup pre-shredded coleslaw mix in a bowl.
Top the coleslaw with 3 ounces shredded rotisserie chicken.
Sprinkle 1 Tbsp chopped peanuts over the bowl.
Pour the prepared peanut dressing evenly over the chicken and slaw.
Toss everything together right before eating, and enjoy.
Optional Garnishes
Add 1 Tbsp sliced green onions, 1 tsp sesame seeds, or a squeeze of fresh lime for extra flavor.
Notes
To make it faster, use store-bought light Asian dressing, such as Skinny Girl Asian Sesame Dressing.
