Asian-Inspired Peanut Slaw Bowl (Reader Recipe)
Ingredients
- 1 cup pre-shredded coleslaw mix
- 3 ounces rotisserie chicken shredded (about 1/2 cup)
- 1 Tbsp chopped peanuts
- 1 Tbsp peanut butter powder such as PB2
- 1 tsp low-sodium soy sauce
- 2 tsp water adjust for desired dressing consistency
- 1 Tbsp sliced green onions optional
- 1 tsp sesame seeds optional
- 1 wedge lime
Instructions
- In a small bowl, mix 1 Tbsp PB powder, 1 tsp low-sodium soy sauce, and 2 tsp water. Stir until smooth. Adjust water for desired consistency. Set aside.
- Place 1 cup pre-shredded coleslaw mix in a bowl.
- Top the coleslaw with 3 ounces shredded rotisserie chicken.
- Sprinkle 1 Tbsp chopped peanuts over the bowl.
- Pour the prepared peanut dressing evenly over the chicken and slaw.
- Toss everything together right before eating, and enjoy.
Optional Garnishes
- Add 1 Tbsp sliced green onions, 1 tsp sesame seeds, or a squeeze of fresh lime for extra flavor.
