8applesChoose large, firm apples that are good for baking.

Instructions
For Pancakes
Directions: Peel, core, and chop the apples into bite size pieces. Once chopped, add 3T brown sugar and a dash of cinnamon. Divide the mixture in half.
In a large mixing bowl, combine flour, sugar, baking powder, salt, egg, milk and applesauce. Mix until combined. Do not over mix. Add half the chopped apples and stir gently.
On a griddle or skillet, make into pancakes, using about 1/4 cup batter for each pancake.
For Apple Glaze
While pancakes are cooking, make the sauce. In a sauce pan, melt the butter on a med/low heat. Once butter is melted add remaining brown sugar (1/2c), remaining apples, and a dash of cinnamon, to taste.
Stir until brown sugar dissolves and makes a sauce. Make sure apples are completely coated.
Serve each stack of pancakes with a spoonful of sauce.
Notes
Modifications:
For gluten free - Use a gluten-free flour baking mix, such as King Arthur All-Purpose Gluten-Free Baking Mix.
For dairy free - Use non-dairy milk and butter.
For vegan - Use non-dairy milk and butter.
