These rich, decadent apple pie pancakes taste just like warm apple pie.
My daughter, Beckh, created this recipe. The pancakes have apples cooked into them, which is already fantastic. The best part though, is the delicious glazed apple topping.
Bekah’s Apple Pie Pancakes
Ingredients
- 1 cup flour white or whole wheat, or gluten-free flour mix
- 1 T sugar or powdered sweetener
- 2 t baking powder
- 1/4 t salt
- 1 egg beaten
- 1 cup milk skim or almond milk
- 2 T applesauce
- 8 apples Choose large, firm apples that are good for baking.
- dash cinnamon
- 1/2 cup brown sugar or brown sugar powdered sweetener
- 3 T brown sugar or brown sugar powdered sweetener
- 1/4 cup butter or plant-based butter replacement
Instructions
For Pancakes
- Directions: Peel, core, and chop the apples into bite size pieces. Once chopped, add 3T brown sugar and a dash of cinnamon. Divide the mixture in half.
- In a large mixing bowl, combine flour, sugar, baking powder, salt, egg, milk and applesauce. Mix until combined. Do not over mix. Add half the chopped apples and stir gently.
- On a griddle or skillet, make into pancakes, using about 1/4 cup batter for each pancake.
For Apple Glaze
- While pancakes are cooking, make the sauce. In a sauce pan, melt the butter on a med/low heat. Once butter is melted add remaining brown sugar (1/2c), remaining apples, and a dash of cinnamon, to taste.
- Stir until brown sugar dissolves and makes a sauce. Make sure apples are completely coated.
- Serve each stack of pancakes with a spoonful of sauce.
Notes
For gluten free – Use a gluten-free flour baking mix, such as King Arthur All-Purpose Gluten-Free Baking Mix.
For dairy free – Use non-dairy milk and butter.
For vegan – Use non-dairy milk and butter.
