This cottage cheese bowl is quick, filling, and a great use for leftover cooked spaghetti squash.

Ingredients

cup
fat-free or low-fat cottage cheese
drained if needed

cup
spinach
fresh leaves if possible
2
cups
spaghetti squash
cooked and shredded, drained if needed
1/2
cup
spaghetti sauce
such as Hunt's

Tbsp
Parmesan cheese
Instructions
This may be eaten hot or cold, but I prefer it hot.
To heat, layer ingredients in a microwave-safe bowl, ending with sprinkling the Parmesan cheese on top.
Cook in microwave for 2 minutes or until hot throughout.
