Step 1: Gather Ingredients

First, gather the needed ingredients. Note that this recipe requires cooked spaghetti squash. I like to make this protein bowl for my lunches after we’ve had a dinner that includes spaghetti squash. It’s a perfect way to use leftovers and a great, quick mid-day meal that is filling and tasty.
Step 2: Assemble Bowls

Start with a layer of spinach and cottage cheese, then cooked spaghetti squash strands.

Top with spaghetti sauce, then repeat all of these layers a second time.


Finally, top with Parmesan cheese.
Step 3: Heat and Eat!

I cook this in the microwave for a couple minutes, but you can also baked it in a 350 degree oven until hot throughout, about 10-15 minutes. (It can also be eaten cold, but I much prefer it heated up.)

Ingredients
- 1/2 cup fat-free or low-fat cottage cheese drained if needed
- 1 cup spinach fresh leaves if possible
- 2 cups spaghetti squash cooked and shredded, drained if needed
- 1/2 cup spaghetti sauce such as Hunt’s
- 3 Tbsp Parmesan cheese
Instructions
- This may be eaten hot or cold, but I prefer it hot.
- To heat, layer ingredients in a microwave-safe bowl, ending with sprinkling the Parmesan cheese on top.
- Cook in microwave for 2 minutes or until hot throughout.
