Ingredients
To make pancakes (for 1 person):
1/2cupcottage cheese1% or fat free
1/2cupoatmealquick or old fashioned (not steel-cut)
1/4bananaor 1/8 cup applesauce
1egg
1tspvanilla extract
1/2tspcinnamonoptional
1/2tspbaking powder
2Tablespoonspowdered sweetenerI used Trivia or vanilla protein powder
To make sandwich:
1lean turkey sausage pattysuch as Butterball All Natural.
1American cheese slice
1eggmade into a patty. See notes below for tips.
¼cuppancake syrupsugar-free, light, or pure maple
Instructions
To make pancakes:
Combine all the ingredients in the blender and blend for about 30 seconds. (This works well in a mini-blender like a Magic Bullet, but a full-sized blender can also be used, but you might need to scrape the sides several times.) Do not overblend - only mix until combined.
The mixture should be the consistency of a very thick smoothie. It will be thicker than typical pancake mix.
Allow the mixture to sit for 5 minutes for baking powder to activate.
Heat a skillet to medium to medium-low (lower than you would use for regular pancakes) heat. Spray pan with cooking spray if needed to prevent sticking.
Alternatively, these can be made into small waffles in a mini-waffle maker such as a Dash. If using a waffle maker, pre-heat the waffle maker and spray generously with cooking spray every time you start a new waffle.
Pour mixture into pancakes, about ⅓ cup each. When the top begins to bubble, flip over. Cook until golden brown and serve. Make 4-6 pancakes or 4-5 mini-waffles.
To assemble sandwiches:
Heat turkey sausage as indicated on the package.
Make an egg patty. see notes below for tips.
To assemble a sandwich, take 2 pancakes. (Eat the other pancakes separately, or save for a snack for later in the day.) Drizzle 2 pancakes with syrup. Top one pancake (syrup on the inside) with sausage, cheese, and egg. Add remaining pancake as the top of the sandwich, and eat.
If desired, serve extra syrup on the side for dipping.
To make the egg patty: scramble the egg in a bowl by beating with a fork. Cook the egg in a skillet or in a coffee mug (spray with cooking spray) in the microwave for 45 seconds. If desired, you can cut the egg into a round shape with a cookie cutter or the top of a glass.
If you don’t have time to make pancakes, you can substitute Hungry Jack frozen mini-pancakes. Adjust points or calories as needed.
