Ingredients

1tspsage
1tspsalt
⅛tsppepper
½tspcinnamon
2medium-sized sweet potatoeschopped into medium dice
3tspolive oil
2applescored and sliced
1onionsliced
4thick-cut bone-in pork sirloin chops1 pork chop per serving, 6-8 ounces raw, about 4 ounces cooked meat
Instructions
Preheat oven to 400 degrees. Spray 2 baking pans with cooking spray.
In a small bowl, combine sage, salt, pepper, and cinnamon.
Arrange sweet potatoes on a baking sheet. Drizzle with 1 tsp olive oil and sprinkle with ⅓ of spice mix.
Bake for 30 minutes.
Remove potatoes from oven and stir. Arrange apples and onions around sweet potatoes. Drizzle with the second tsp of olive oil and sprinkle with about ⅓ of the spices. Bake 20-30 minutes more or until all items are soft when pierced with a fork.
Remove vegetables from oven and set aside. Turn oven to BROIL. (Note: Items on broil cook quickly, so do not leave them unattended.)
Arrange pork chops on second baking sheet. Drizzle chops with the remaining 1 tsp of olive oil and sprinkle with the remaining spice mixture.
Place chops in oven for approximately 10 minutes. Turn over and bake 5-10 minutes more, until pork chops reach an internal temperature of 145 degrees or are just slightly pink. (Observe chops - overcooking them leads to dry meat.)
