Step 1: Gather & Prep Ingredients

Preheat oven and mix spices in a small bowl.
Dice sweet potatoes into a small dice. Slice onions and apples. Drizzle on a bit of the olive oil and sprinkle with spices.
Step 2: Roast Sweet Potatoes, Apples, and Onions

First, roast just the sweet potatoes since they take the longest to cook. Then add the apples and onions and roast again.

Check for doneness. The veggies should pierce easily with a fork, and you want the apples to be soft but not mushy.

Step 3: Broil Pork Chops

Drizzle pork with the remaining oil and sprinkle on more of the spice mix. (You might not use it all.)

- ⅛ tsp pepper
- ½ tsp cinnamon
- 2 medium-sized sweet potatoes chopped into medium dice
- 3 tsp olive oil
- 2 apples cored and sliced
- 1 onion sliced
- 4 thick-cut bone-in pork sirloin chops 1 pork chop per serving, 6-8 ounces raw, about 4 ounces cooked meat
Instructions
- Preheat oven to 400 degrees. Spray 2 baking pans with cooking spray.
- In a small bowl, combine sage, salt, pepper, and cinnamon.
- Arrange sweet potatoes on a baking sheet. Drizzle with 1 tsp olive oil and sprinkle with ⅓ of spice mix.
- Bake for 30 minutes.
- Remove potatoes from oven and stir. Arrange apples and onions around sweet potatoes. Drizzle with the second tsp of olive oil and sprinkle with about ⅓ of the spices. Bake 20-30 minutes more or until all items are soft when pierced with a fork.
- Remove vegetables from oven and set aside. Turn oven to BROIL. (Note: Items on broil cook quickly, so do not leave them unattended.)
- Arrange pork chops on second baking sheet. Drizzle chops with the remaining 1 tsp of olive oil and sprinkle with the remaining spice mixture.
- Place chops in oven for approximately 10 minutes. Turn over and bake 5-10 minutes more, until pork chops reach an internal temperature of 145 degrees or are just slightly pink. (Observe chops – overcooking them leads to dry meat.)
