2Tbspbuttermelted, or olive oil, or may substitute vegetable broth to reduce points
1TbspOld Bay Seasoning
1 tspgarlic powder
1poundmedium shrimpraw, peeled and deveined
12ouncessmoked turkey sausage
1lemoncut into wedges
2Tbspfresh parsleychopped, optional
Instructions
Preheat oven to 400℉. Coat a baking sheet with nonstick spray.
In a large pot of boiling salted water, cook potatoes for ten minutes. For the last five mins, add corn to pot.
In a small bowl, combine melted butter, garlic and Old Bay Seasoning.
Place potatoes, corn, shrimp and sausage in a single layer onto baking sheet. Drizzle with butter mixture and gently toss to combine.
Bake for 12 to 15 minutes, or until the shrimp are opaque and corn is tender. Take care not to overbake as this makes shrimp tough. Only cook until shrimp just turn pink.
Serve immediately with lemon wedges, garnished with parsley, if desired.
