Easy Peasy Paleo Meatballs and Sauce

If you cannot tell by my recent blog posts, we LOVE Italian food in our household. Growing up in NJ and being exposed to “off the boat” Italian food is something that I will carry with me in the kitchen the rest of my life. Since I have basil and oregano growing in my garden, I’m finding that I am making more Italian dishes these days to showcase their deliciousness. The meatballs and sauce are ridiculously simple to make and fast since you just leave them on the oven top. I prefer to cook my meatballs in the sauce because the meat juices enhance the flavor. Bon Appetite!
Easy Peasy Meatballs and Sauce
Ingredients
- 1 lb grass fed ground beef
- 1 lb mild or spicy Italian sausage take off the casings if you buy links
- 2 tbsp minced fresh basil
- 1 tbsp minced fresh oregano
- 1 tbsp minced garlic
- 1 ½ tsp salt
- 1 tsp ground pepper
- 1 egg
- ½ cup almond flour add more if meatballs seem too wet
- 14 oz can of tomato sauce
- 1 14 oz can of crushed tomatoes
- 2 tsp Salt
- 1 tsp Pepper
- 1 ¼ tsp granulated garlic
- 1 ¼ tsp granulated onion
Instructions
- Place all meatball ingredients together in a bowl.
- Use the best mixing tool you have-your hands, to combine the ingredients.
- Add all of the sauce ingredients together in a pot and place on medium-low heat and then add all of your meatballs. It is ok if the meatballs are not all covered, they will shrink and all of the yummy fat juices will sink into the sauce! Cover the pot and simmer for 40-45 minutes.
- About 20 minutes in, mix the meatballs in the sauce.
- Enjoy! We like them in our house as a mid-day protein snack but feel free to pair them with your favorite pasta, spaghetti squash or any spiralized vegetable.

Even the Mac Daddy isn’t very expensive. I might have to consider getting one. My problem with all the kitchen tools is I don’t have a lot of storage space. I do love them though.

Great idea! I love using spaghetti squash instead of noodles! I’ve also heard you can make zucchini “ribbons” but I’ve never tried it. Not sure if you need a special tool or what.
