Pancakes are a weekend staple in our household. To us, it signifies a morning of relaxation and family time. Depending on the day and the ingredients in the fridge, I make a variety of different flavors. This weekend I had bacon, apples, and kale on hand so, voila, bacon apple topped kale pancakes! I will be honest, Iโm learning to get on the kale bandwagon- my husband loves it, Iโm learning more and more to not detest it. I will say that baby kale does not have as strong of a flavor and placing it in the food processor with the pancake ingredients really helps; you really do not taste it at all but you can feel good knowing you are getting all of the health benefits from it!

Ingredients:
I adapted this super simple recipe for the Pancakesย by adding 1/4c of baby kale to the mix before blending it.
Topping:
2 apples-diced
2 slices of bacon-diced
1tsp cinnamon
1tsp vanilla
1/4 tsp ground ginger
1/4 tsp sea salt
1tsp coconut sugar (I like this Brand)
Directions for topping:
Dice up the slices of bacon.
Place a saucepan on medium heat and add the bacon, cook the bacon until crisp.
Dice up the apples.
Using a slotted spoon, scoop out the bacon but leave the fat and add the apples. You want the layer of the bacon fat to coat the bottom of the pan- it will give the apples a coating so they do not stick and it adds delicious bacon flavor.
Add the cinnamon, ginger, vanilla, salt and sugar to the apples and cook for 15 or so minutes and add the bacon for the last minute to reheat.
The topping is easy to make while the pancakes are cooking BUT if you need your coffee to fully kick in before cooking, the topping can be easily made the night before and reheated in a pan before serving with the pancakes!
