
This amazingly delicious instant pot & oven Heathy Salsa Chicken Recipe is one of my favorite quick, easy dinner recipes you will love. We all have those recipes we have memorized that are the fast ones for when you need a quick dinner.
I’ve been making this WW chicken recipe for years, but I got super excited when I discovered this recipe is ZERO points for WW members and is low in calories for everyone.

WW (Weight Watchers) Mexican Food
This Instant Pot Salsa Chicken recipe is versatile and makes excellent Mexican burrito bowls, taco salad, or chicken tacos for an easy weeknight dinner.
You can create an entire ZERO POINTS DINNER with Weight Watchers points with this recipe, too.
- Start with cauliflower rice as your base. (0 points for everyone)
- Add black or pinto beans (0 points for some)
- Add Easy Salsa Chicken (0 points)
- Top with lettuce and tomato (0 points for all)
- Add additional salsa and plain, fat-free (0 points for all)
- Serve over a bowl of lettuce for chicken taco salad (0 points for all).
- Serve with a whole wheat tortilla (add points) for a chicken taco.

Cooking Instructions for Slow Cooker and Oven for Salsa Chicken
Crock Pot – Cook chicken for 4 hours on High.
Oven – Bake in a 9×9 dish for 30 minutes at 350 degrees. Remove from oven.

Easy Salsa Chicken
Ingredients
- 4 chicken breasts fresh or frozen
- 15 ounces salsa (1 jar)
- ยฝ cup chicken broth or water
- 1 cup Greek yogurt plain, non-fat
Instructions
Oven
- Preheat oven to 350โ. Spray an 8×8 or 9×9 pan with cooking spray.
- Place chicken breasts in pan. Pour salsa over chicken. Cover and cook for 30 minutes or until internal temperature of chicken is 165โ.
- Remove chicken, chop with knife or shred with 2 forks. Return chicken to pan.
- Stir in Greek yogurt.
- Serve over rice, in a taco salad, or tortillas (not included in nutritional calculations).
Instant Pot
- Add chicken breasts to Instant Pot inner pot.
- Add chicken broth or water.
- Top with salsa.
- Cook on “Manual” or “Poultry” for 15 minutes.
- Natural or quick release.
- Optional – if you desire a thicker sauce, simmer on “saute” for 5 minutes.
- Allow to cool for 10 minutes.
- Remove chicken, chop with knife or shred with 2 forks. Return chicken to pot.
- Stir in Greek yogurt.
- Serve over rice, over taco salad, or in tortillas (additional points).
Slow Cooker
- Add chicken breasts, salsa and broth or water to crock pot.
- Cook on HIGH for 4 hours.
- Remove chicken, chop with knife or shred with 2 forks. Return chicken to slow cooker.
- Stir in Greek yogurt.
- Serve over rice, in a taco salad, or tortillas (not included in nutritional calculations).
