I’ve been making this WW chicken recipe for years, but I got SUPER excited when I discovered this recipe is actually ZERO points for WW members with points, and it’s low in calories for everyone.

This Instant Pot Salsa Chicken recipe is versatile and makes great Mexican burrito bowls, taco salad, or chicken tacos for an easy weeknight dinner.
You can actually create an entire ZERO POINTS DINNER with Weight Watchers points with this recipe, too.
- Start with cauliflower rice as your base. (0 points for everyone)
- Add black or pinto beans (0 points for some)
- Add Easy Salsa Chicken (0 points or low points)
- Top with lettuce and tomato (0 points for all)
- Add additional salsa and plain, fat free (0 points for all)
- Serve over a bowl of lettuce for chicken taco salad (0 points for all).
- Serve with a whole wheat tortilla (add points) for a chicken taco.

Cooking Modifications for Slow Cooker and Oven for Instant Pot Salsa Chicken
Crock Pot – Cook chicken for 4 hours on High.
Oven – Bake in 9×9 dish for 30 minutes at 350 degrees. Remove from oven.

Healthy Instant Pot Salsa Chicken Recipe
Ingredients
- 4 chicken breasts fresh or frozen
- 15 ounce salsa 1 jar
- 1/2 cup chicken broth or water
- 1 cup Greek yogurt plain, non-fat
Instructions
- Add chicken breasts to Instant Pot inner pot.
- Add chicken broth or water.
- Top with salsa.
- Cook on “Manual” or “Poultry” for 15 minutes.
- Natural or quick release.
- Optional – if you desire a thicker sauce, simmer on “saute” for 5 minutes.
- Allow to cool for 10 minutes.
- Remove chicken, chop with knife or shred with 2 forks. Return chicken to pot.
- Stir in 1 cup plain, non fat Greek yogurt.
- Serve over rice, over taco salad, or in tortillas (additional points).
