Most dry rubs have some of the following ingredients…
Herbs and Spices: Including a different variety of herbs and spices is something to play with and while the seasonings may taste intense on their own, once they’ve melded into the meat add just the right amount of flavor and heat.
Herbs and spices to use in your dry rub:
- Dark brown sugar (or go sugar free)
- Ground black pepper
- Chile powder
- Garlic powder
- Dry mustard
- Kosher salt
- Cayenne pepper for heat
What Do You Put On Ribs
Hey Grill Hey says this, “Let’s talk about the building blocks of a good rib rub. I think the best rib rubs start with sugar as a base. Pork and sweet were just made to go together. From there, you’ll see recipes with salt and pepper plus a mix of things that are custom to each pitmaster. I like to add in smoked paprika for a boost of wood fired flavor as well as a gorgeous red color that pops. Onion and garlic are classic flavor enhancers. Ground mustard ends up in almost all of my rubs as a punchy, almost acidic note of brightness.”
Should I Dry Rub Ribs Overnight
If you’re planning to enjoy your ribs with purely the dry rub, overnight is best. You don’t want to go longer than overnight (10-12 hours) though. This dry rub recipe is very well salted to get that moisture-locking effect, so if it is on for too long it can dry out the meat similar to curing.
How Long Should Rub Be On Ribs Before Cooking
We played around with different time frames and found that when we placed our ribs in the refrigerator overnight or for at least 8 hours offered the best flavor. Cover the remaining rub in an airtight container or seal in a plastic bag. Remove ribs from the refrigerator about 30 minutes before cooking and allow to come to room temperature.

Dry Rub For Ribs No Sugar
Sugar Free Rib Rub Recipe
- 1/4 cup paprika
- 4 T dry mustard
- 2 T onion powder
- 2 T garlic powder
- 2 T basil
- 3 tsp ground red pepper optional
- 2 T chili powder
- 1 T black pepper
- 1 T salt
- Combine all ingredients in an air-tight container. When applying, generously season each side of ribs and rub into meat with fingers.
