Easy and Healthy Ratatouille (Reader Recipe)
Ingredients
- 1 eggplant medium or large
- 3 zucchini or more
- 2 onions
- 2 Tbsp Italian seasoning or other herbs
- 1 carrot optional
- 15 ounces tomatoes diced, canned or fresh
Instructions
- Wash all vegetables and chop into cubes.
- Cut onion and cook over medium heat in a skillet with cooking spray, such as Pam.
- In a pot, add eggplant, zucchini, and cooked onion. Sprinkle with herbs. If using carrots or tomatoes, add those as well. Cook over low to medium heat until it becomes a stew, about 20 minutes.
Slow Cooker
- Wash all vegetables and chop into cubes.
- Cut onion and cook over medium heat in a skillet with cooking spray, such as Pam.
- In a slow cooker, add eggplant, zucchini, and cooked onion. Sprinkle with herbs. If using carrots or tomatoes, add those as well. Cook on Low for 2-4 hours.
