This Garden Zucchini & Corn Saute has quickly become a favorite at our holiday table. It has just the right amount of sweet, salty, and crunch.

This side has become a classic at our Thanksgiving table, but it comes together quickly for any weeknight side dish, too. This dish would be a great one in the summer time too, when zucchini is at an abundance.

Garden Zucchini & Corn Saute

A crispy, easy, healthy side dish for any meal.

  • 1 medium zucchini & 1 medium yellow squash
  • 1/3 cup sliced onion
  • 1 ½ tsp. olive oil
  • ¾ cup whole kernel corn
  • 2 garlic cloves minced


  • In a large skillet, saute zucchini and onion in oil until crisp-tender. Add corn and garlic; saute 2 minutes longer or until vegetables are tender. Sprinkle with sugar, salt and lemon-pepper mixture.
