This Garden Zucchini & Corn Sauté has quickly become a favorite at our holiday table. It has just the right amount of sweet, salty, and crunch.
This side has become a classic at our Thanksgiving table, but it comes together quickly for any weeknight side dish, too. This dish is a great one in the summer time too, when zucchini is at an abundance.
My mother-in-law Jeanne introduced me to this recipe and now I make it regularly. This makes a great zucchini side dish to accompany any main dish like this Instant Pot Goulash.
You could also add ground beef, diced chicken, garbanzo beans or tofu strips and serve this as a main dish.

Garden Zucchini and Corn Sauté
Ingredients
- 1 medium zucchini & 1 medium yellow squash
- 1/3 cup sliced onion
- 1 ½ tsp. olive oil or vegetable broth
- ¾ cup whole kernel corn
- 2 garlic cloves minced
- 1 dash sugar optional
Instructions
- In a large skillet, saute zucchini and onion in oil or broth until crisp-tender. Add corn and garlic; saute 2 minutes longer or until vegetables are tender.
- Sprinkle with salt and sugar (if using). Serve hot.
