Breakfast Monster Cookies Review
I made these cookies last weekend to meal prep for a road trip. They are easy to make and really good!

In fact, my family ate them so fast, I didn’t get to take any with me on the trip. (But at least my family is eating something healthy.)
These have a soft, muffin-top type texture. What I really like is that they are HUGE, and I’m a volume eater who loves a generous portion size. I added 1/4 cup of sugar free chocolate chips to mine, which gave them a wonderful chocolate flavor, but only adds a few extra points and calories to the whole recipe.

I recommend making these.
Monster Breakfast Cookies
Ingredients
- 1 1/2 cups old-fashioned oats
- 1 cup + 2 Tbsp, whole wheat flour I use white whole wheat flour
- 3/4 cup bran flakes
- 1 cup Splenda powder or your sweetener of choice
- 1/4 cup raisins can omit or substitute sugar-free chocolate chips!
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 bananas, mashed into a puree choose over-ripe for best flavor
- 3 eggs
- 3/4 cup pumpkin canned
Instructions
- Preheat oven to 375℉.
- Combine dry ingredients separate from the combined wet ingredients, then stir together.
- Using a 1/3 c measuring cup, scoop 1/3 cup balls onto a baking sheet sprayed with cooking spray.
- Bake at 375°F for approximately 15 minutes.
