
Summer is here and with the heat of summer my thoughts turn to the tropical flavors of mango. You will love this recipe for Mango Cashew Salad with Honey-Yogurt Dressing.
I didn’t grow up eating mango, so this flavor is a relatively new favorite of mine. As an adult, a friend of mine who spent several years living in Mexico taught me how to eat fresh mangoes by slicing them open and sprinkling them with lime and salt. Her kids ate them skin and all, but I prefer them without skin. Either way, mangoes are amazingly healthy with 1 cup having 100 calories, no fat, and full of vitamins C, A, and B-6.
A Mango slicer comes in handy when pitting and slicing mangos, especially for larger jobs like this recipe.

Mango Cashew Salad with Honey Yogurt Dressing
Ingredients
- INGREDIENTS :
- 1 mango cubed, ripe
- 80 grams cashews roasted
- 1 cup Red Leaf lettuce
- MANGO YOGURT DRESSING:
- 1 mango cubed, ripe
- 125 grams Greek Yogurt plain or vanilla
- 2 Tbsp honey
Instructions
- Arrange salad on a platter. Lay lettuce, add ripe mangoes and top with cashews. Blend dressing ingredients in a blender and drizzle on the salad. Enjoy!

It takes practice, but once you get the hang of it, preparing mangoes for salads like this is a breeze.

Do you need a new blender? When it comes to top notch, a Vitamix is one of the best blenders you will find. A close second is the Ninja. I had a Ninja for several years and loved how well in blended most everything I threw in it. I used it like a food processor and while it’s not as powerful as Vitamix, it’s a very good blender that has many more uses than a regular inexpensive blender.

This is a wonderful salad that is fresh, different and delicious. Perfect for a potluck or picnic.
