- 1 bag spring salad mix
- 1 pear, peeled and diced
- 2 oz pomegranate seeds
- 4 Tbsp dry-roasted sunflower seeds
- 2 oz goat cheese
- 2 chicken breasts, grilled or pan-fried with salt and pepper, sliced
- 6 Tbsp extra virgin olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp honey
- 1 cup frozen cherries, thawed
- juice from one lime (approximately 1 Tbsp)
- To make dressing:
- Place cherries in a food processor or blender and blend until smooth.
- Add olive oil, red wine vinegar, honey, and lime and blend until smooth.
