This delicious salad is crispy, refreshing and delicious, yet full of textures and flavors. This Pomegranate Pear salad is a wonderful winter salad option and is 10 WW Freestyle points.
Ingredients
  • 1 bag spring salad mix
  • 1 pear, peeled and diced
  • 2 oz pomegranate seeds
  • 4 Tbsp dry-roasted sunflower seeds
  • 2 oz goat cheese
  • 2 chicken breasts, grilled or pan-fried with salt and pepper, sliced
  • 6 Tbsp extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp honey
  • 1 cup frozen cherries, thawed
  • juice from one lime (approximately 1 Tbsp)
Instructions
  1. To make dressing:
  2. Place cherries in a food processor or blender and blend until smooth.
  3. Add olive oil, red wine vinegar, honey, and lime and blend until smooth.
  4. To make salad:
  5. Divide spring mix evenly into 4 large salad bowls.
  6. Top with goat cheese, sunflower seeds, pear, and chicken breast.
  7. Top with Pomegranate seeds.
  8. Drizzle with dressing and serve.
