Healthier Turkey Meatloaf (Reader Recipe)
Ingredients
- 1 pound 93% lean ground turkey
- 1 cup fresh breadcrumbs
- ¾ cup carrots finely grated
- ½ cup mushrooms thinly-sliced or finely chopped
- ⅓ cup onion finely chopped
- ¼ cup canned tomato sauce
- 1 egg
- 1 clove garlic finely chopped
- 4 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup ketchup no sugar added
Instructions
- Preheat the oven to 375°F. Line a large sheet pan with parchment paper or foil.
- Using your hands or a wooden spoon, combine all ingredients, except the ketchup, in a large bowl.
- Mix until combined, but do not overmix or the meatloaf will be tough.
- Shape the mixture into a 4-by-8-inch loaf on the prepared pan. Brush all over with the ketchup.
- Bake until an instant-read thermometer inserted into the center of the meatloaf registers 165°F, about 45 minutes.
- Transfer to a cutting board and let rest for 10 minutes.
- Cut the meatloaf into 8 slices. Serving size: 2 slices
