Pasta Salad with Chicken and Fruit
Peaches may seem like an unusual addition to a savory salad, but once you’ve tried this, you’ll agree that the sweet and savory combo is delicious.
I’ve made this salad several times now, and my family really enjoys it. You can serve it hot or cold.
While this salad is best when you cook the peaches and chicken together, for easier meal prep, you can use pieces of rotisserie chicken.
Fresh peaches are best in this salad, but frozen (thawed) and canned (drained) peaches also work. You can substitute mango or pineapple if you don’t like peaches.
Healthy Weight Watchers Pasta Salad with Fruit
This delicious salad is light and refreshing. It includes plenty of fresh vegetables and fruit, anti-inflammatory spinach and olive oil, and the protein from the chicken is great for keeping you full and aids in weight loss.
The fiber from the whole grain pasta is excellent for digestion, although it can be replaced with regular pasta or gluten-free if needed (adjust points accordingly).

Here are the ingredients you’ll need to make this tasty whole-grain, high-protein salad:
- chicken breast
- cherry or grape tomatoes
- whole wheat pasta
- onion
- fresh peaches, or frozen or canned peaches
- fresh spinach
- honey
- olive oil
- salt
- pepper
Step by Step Instructions for Healthy Chicken and Peach Pasta Salad – Just 2 Easy Steps!
Follow these steps to make this delightful, anti-inflammatory pasta salad.
Step 1 – Cook Chicken & Peaches to Carmelize
Heat a non-stick skillet on the stovetop over medium heat. Add 1 Tablespoon oil. Add chicken and cook for 5 minutes.
Add peach slices. Stir and let cook until chicken is golden brown and peaches are caramelized.
Salad can be served hot or cold. If serving hot, continue with next steps. If serving cold, allow chicken to cool. (Recipe can be completed to here the night before.)
Step 2 – Toss & Serve
In a large salad bowl, add tomatoes, spinach, onion, chicken, and peaches.
Drizzle with 1 tablespoon of oil remaining, and sprinkle with 1 teaspoon of salt.
Gently toss, then serve.

Ingredients
- 1 pound chicken breast uncooked and cut in cubes
- 10 cherry or grape tomatoes cut in half
- 1 ¼ cups whole wheat pasta uncooked
- ¼ cup onion diced
- 2 fresh peaches sliced, or 1 ½ cups frozen or canned peaches
- 2 cups spinach
- 1 Tbsp honey
- 2 Tbsp olive oil
- 2 tsp salt
- 1 tsp pepper
Instructions
