Pumpkin Gingerbread by Zack is a perfect recipe for your holiday season. With just two ingredients, it’s one of the most simple recipes you will ever come across, plus it’s low-fat, low in calories, and super yummy. This cake is great for Christmas, Thanksgiving, and Fall and is low in calories and WW points.
Pumpkin Gingerbread by Zack
The pumpkin makes this really moist, and the mix has a great combination of gingerbread flavors.
This recipe makes 8 generous servings. I recommend serving with a dollop of fat free cool whip.
Zack eats a low protein diet for his metabolic condition, GA1, and this fits with his diet, too.

While it tastes great plain, I like this served with light whipped topping or light vanilla ice cream. This can also be made into cupcakes.
