His question made me pause because I love Instant Pot pressure cooking, and I’ve made a number of wonderful recipes. But the absolute BEST? That’s a tough one, but I’m here to share with you the recipe I shared with him.

Absolute Best Instant Pot Recipe: Instant Pot Macaroni and Cheese
The absolute best Instant Pot recipe I’ve ever made is Instant Pot Macaroni and Cheese.
When I first was gifted with an Instant Pot, my friend who gave it to me asked, “Do your kids like macaroni and cheese?”
Me, “Heck yeah my kids love macaroni and cheese but enough about the kids, I love macaroni and cheese!”
Who doesn’t love a bowl of creamy, cheesy delicious goodness? Instant Pot Macaroni and Cheese does not disappoint, and it’s so incredibly easy to make because everything cooks in one pot in just minutes.
Now, I have to tell you right up front that this is not my recipe. This recipe has been floating around the internet since people first started uttering the word Instant together with Pot.
There are variety of versions of Instant Pot Macaroni and Cheese, but this one is my favorite because it is so simple.
My one tip is that if you want to get your mac and cheese really creamy, do not use pre-shredded cheese. The caking agent they use to prevent clumping will make your cheese sauce kind of clumpy. I’ve used it in a pinch and it still tastes totally delicious, but the texture is a bit off.
Instant Pot Macaroni and Cheese
- 1 pound elbow macaroni
- 2 t salt
- 1 12 oz can evaporated milk
- 3 T butter
- 3 cups shredded cheddar cheese
- Combine macaroni, salt, and 4 cups water in Instant Pot. Lock lid and cook on "manual" or "pressure cook" for 4 minutes.
- Quick release. (Be careful here as pasta can cause spewing. I suggest releasing steam a bit at a time.)
- Carefully unlock and remove lid.
- Stir in the evaporated milk, butter and 1/4 cup water.
- Then add the Cheddar, a little at time, while constantly stirring, until the cheese is completely melted.
- Serve hot.
Healthier Instant Pot Macaroni and Cheese
We aren’t even going to talk about the points/calories/fat in the Instant Pot Macaroni and Cheese recipe above because it’s a splurge recipe.
Instant Pot Macaroni and Cheese deserves to stand in its all-fattening goodness for those times when you want to splurge. (Another recipe like this is my 6-ingredient Chocolate Ganache Salted Caramel Pie – it’s worth it, friends. It’s very, very worth it.)
