Air Fryer Coconut Shrimp – Simple Step by Step Recipe

Air Fryer Coconut Shrimp
Ingredients
- 16 oz large shrimp about 16 to 20, peeled to the tail
- 2 eggsย beaten
- 1/2 cup All-Purpose Flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup Panko Breadcrumbs
- 1 tsp salt
- 1/4 tsp ย black pepper
- Oil for Spraying
Instructions
- Set the shrimp on a flat surface that is covered with paper towels. Pat the shrimp dry.
- Place the eggs in a shallow dish and whisk.
- Add Panko, coconut, and seasonings to a separate bowl.ย Mix to combine.
- Pre-heat the air fryer to 400F.
- Dredge each shrimp first in the egg mixture, and finally press it into the breadcrumb-coconut mixture to coat all sides.
- Bake shrimp for 5 minutes. Plan to make two batches.

- Crack eggs into a shallow dish and whisk.
- In a separate bowl, add Panko, coconut, and seasonings.ย Mix to combine.
- Pre-heat the air fryer to 400F.
- Dredge each shrimp first in the egg mixture, and finally press it into the breadcrumb-coconut mixture to coat all sides.
- Bake shrimp for 5 minutes, leaving room in between so the coating can get crispy when it comes in contact with the swirling hot air.
- Plan to make two batches.

Serve shrimp with dipping sauce if desired.
How to Make Dipping Sauce for Air Fryer Shrimp
- 1/2 cup cherry or cranberry preserves, regular or sugar-free
- 1 tsp chili powder
- 1/8 tsp red pepper.
Mix all to combine. Serve with shrimp.
