Would a family who is used to eating processed foods enjoy a Clean Eating Thanksgiving? Our family has embarked on a new clean eating lifestyle over the last several months. True, we could have splurged on this one holiday day but our 18 year daughter, Rebekah, who is headed to culinary school in the Fall (thank you God for blessing our family with a born-to-be-chef!) was willing to research new recipes (Pinterest, we love you) and do the majority of the cooking. My mother-in-law Jeanne pitched in and brought some wonderful healthy dishes, too.
Add to this the fact we have food allergies to peanuts, soy and beans in the house, and one child eating a low protein diet. Rebekah had a serious challenge on her hands. Click on the links for all the recipes we used!

Pumpkin Pie with Healthy Easy Oat Crust

Vegan Pie Crust — Oats, Flax, Chia. This was super delicious. It wasn’t like a typical pie crust. It was more chewy and nutty, but it was really tasty and great with pumpkin pie filling.

This clean eating sweet potato casserole was amazing! One of the best I’ve ever tasted. The vanilla really gave it a great flavor.

I would cook forever if it wasn’t for doing the dishes!

Zack helped make the Raspberry Jello Salad.

Oatmeal Rolls rising. These were a chewy, heavier roll but amazing. I ate mine with real butter.

The Sweet Potato Casserole was my favorite.

Whole Wheat Stuffing. We modified the recipe somewhat, using whole wheat bread instead of Challah.

This Flourless Chocolate Cake is a-maz-ing! It’s very rich and tasted best with coconut whipped cream.
