Here’s how to meal prep WW Bistro Boxes for a week of easy grab-and-go lunches. We made 5 lunches Monday through Friday. This is such an Easy Lunch Meal Prep Recipe.

Hard boil 10 eggs. I love hard-boil eggs in my Instant Pot with the 6-6-6 method (6 minutes on pressure cook, 6 minutes natural release, 6 minutes in an ice bath) because they peel beautifully.

Wash grapes and slice apples. Dip apple slices in lemon juice to prevent browning.

Portion peanut butter into individual containers. We used small plastic cups. (If you are like me and would be tempted to eat the peanut butter with a spoon while working, pop in a stick of sugar-free gum.)
Cut pitas into half, then in half again.

Now your WW Bistro Boxes are ready to go – such a delicious, healthy lunch.

I love this idea, but I can’t eat eggs. What can I substitute that would have similar points and nutritional value?
Hi Jean, Any lean protein would work instead of eggs, like a few slices of deli turkey or chicken, pieces of rotisserie chicken, a small cup of non-fat cottage cheese. Those are all zero point foods and would be similar in nutritional information and WW points.

I dip apple slices in a little lemon juice and water mixture. You could also buy pre-cut apples that have a preservative on them. My kids like the little individual-sized bags.

Love this. I replace peanut butter with hummus and replace grapes with cucumber slices. Refreshing and filling.
