As someone at WW Lifetime and maintaining a 100 pound weight loss, I’m a big fan of using soups (especially zero point ones) to help you lose weight and keep it off.

I make a batch of soup on the weekends (this WW turkey chili or WW vegetarian chili are probably the ones I make most often) and eat it for my lunches during the week.

Easy & Healthy Chicken Taco Soup on the Stove
To cook this soup on the stovetop, follow these directions. (To use your pressure cooker, follow the photos below.)
- Place all ingredients in a large soup pot.
- Bring to a boil, then reduce heat to simmer.
- Simmer soup, covered, for 30 minutes, stirring occasionally.
- Remove chicken and shred with a fork. Add back to soup and serve.
Taco Soup Meal Prep & Freezer Meal
This soup is a great meal prep recipe and freezes well. It’s truly a healthier dump dinner recipe. Open the cans and dump it in, add the chicken breasts, and cook.

I make some for the week’s lunches and freeze some for later.

Easy & Healthy Chicken Taco Soup Recipe – Step by Step with Photos
Here’s how to make this delicious, filling Taco Soup either in the Instant Pot, stovetop, or slow cooker.
Step 1: Gather Ingredients

Gather your ingredients. If desired, add a packet of taco seasoning mix. This adds great extra flavor but quite a bit of additional sodium. The spice from the Rotel tomatoes might be enough for you in this recipe.
Step 2: Combine & Cook
Combine all ingredients in an Instant Pot or a pot on the stove top. Chicken may still be frozen. Drain beans and corn. Do not drain tomatoes.

Step 3: Shred Chicken and Serve
Once cooked, remove the chicken and shred or chop. Add back to the soup.

Dig in and enjoy this delicious soup.
Serve with plain, non-fat Greek yogurt (a great zero-point sour cream replacement), avocado, baked tortilla chips or Good Thins corn ones, lime, or low-fat shredded cheddar cheese.
Easy & Healthy Chicken Taco Soup
Ingredients
- 1 can white beans drained and rinsed, 15 ounces
- 1 can corn drained, 15 ounce can
- 1 can black beans drained and rinsed, 15 ounces
- 32 ounces chicken broth (4 cups)
- 1 can tomatoes with green chilis such as Rotel, 10 ounces, undrained
- 1 can diced tomatoes undrained, 15 ounces
- 1¼ pounds chicken breast whole, raw, about 4 small breasts
Taco Seasoning
- 1 Tbsp chili powder
- 1 1/2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
Instructions
Instant Pot
- Add white chili beans, black beans, corn, petite diced tomatoes and tomatoes with green chilies, chicken broth and chicken breast to your Instant Pot.
- Combine taco seasonings and add to Instant Pot. Stir gently.
- Place lid on top, latch into place and turn valve to the seal position.
- Press the “manual” button. Use the +/- button to set to 14 minutes.
- It will take about 10 minutes for it to reach pressure then your count down time will start. Once your instant pot beeps and lets you know your soup is ready allow it to sit for about 10 minutes. Then carefully change the valve to release.
- Once pressure is fully released, carefully remove the lid. Take out the chicken breasts and use a meat thermometer to make sure your chicken is at least 165 degrees. (If it is not at least 165 degrees, place it back in your pot and set the time for 2 mins.) Using two forks, shred the chicken, then place it back in the pot and give it a good stir. Serve and enjoy!
Stovetop
- Place all ingredients in large soup pot. Bring to a boil then reduce heat to simmer.
- Simmer for 30 minutes.
- Remove chicken, shred, and return to pot. Serve and enjoy.
Slow Cooker
- Add all ingredients to cooker and cook on LOW for 4-6 hours or HIGH on 3-4 hours.
- Remove chicken and shred with fork. Add back to soup and serve.

Where do we count ww pts in app?
Jayne, in the gray recipe card, there is a link that says WW info: Click here to track it in the app. (You will have to be on your phone to do this.) The link opens directly in the WW app with the points listed and you simply click to save in your WW “My day”. The points are zero for the regular WW plan as of 2026.
Great recipe!! I’m confused on the serving size though. It says it makes 8 servings and a serving is around 2 cups, but I only got around 8 cups of soups. What did I do wrong? Thank you and thanks for your tasty recipes!!
