Cube steak is beef that has been run through a mechanical tenderizer, called a meat cuber or swissing machine. The resulting steak is called a cube steak (or swiss steak) because of the indentations made by the tenderizer.
Cube steak is both inexpensive and lean, but even with tenderizing can be a more tough type of meat. Often skillet-fried, consider Instant Pot cooking to keep your cube steak especially tender and flavorful.
How Do You Make Cube Steak Tender?
How To Tenderize Cube Steak
If you have a meat mallet it will work great for tenderizing cubed steaks. Place the steak in a freezer Ziploc bag or between two sheets of parchment paper and hammer away.
Not to worry though, you can tenderize cube steak with a big knife and it works great. Just take a large serrated knife and across the steak make lots of cuts about 1/8 inch thick and again diagonal. Flip the steak over and repeat the process.

This simple Instant Pot Baked Cube Steak is as delicious as it is easy. Your family will ask you to make it part of your regular dinner recipe rotation.
Instant Pot Baked Cubed Steak
Ingredients
- 1 ¼ cups water
- 1 can of french onion soup
- 1 can cream of chicken soup
- 1 package of Au Jus Mix
- 6 Cubed Steaks
- ¼ cup water
- 3 Tablespoons cornstarch
Instructions
- Combine 1 ¼ cups water, cream of chicken soup, Au Jus mix and French onion soup together in Instant pot. Mix well.
- Add cubed steak to the pot.
- Attach lid and turn valve to “sealing” position. Set manual pressure to 20 mins.
- Once it beeps (notifying you that it's ready) turn valve to “venting”. This is also known as the “quick release” The steam will be very hot so be careful when doing this. Do not remove lid until the steam has fully stopped.
- Remove lid. Remove steak from the pan. Turn OFF the instant pot.
- In a small bowl or cup, combine ¼ cup water and cornstarch to create a “slurry”. Pour mixture into gravy mixture and whisk well.
- Put steaks back into gravy mixture. Attach lid and leave the instant pot turned off. Keep warm until ready to serve.
