Kathy Schaeffer says
I always end up with extra bananas I need to use, and I’ve heard so much about how delicious and easy this recipe is. And I can do it in the microwave!
Kim S says
I’m interested in this recipe because it is easy, and it looks like a great “Weekend Breakfast”! Maybe with some lean meat, and could you add protein powder to it?
Kathy says
I had some bananas that I wanted to use and this recipe appealed to me. It seemed rich and indulgent, without sugar and many extra calories, and was a very satisfying dessert.
Lynn says
How easy is this?! I just wanted something with a cup of tea, so I halved the recipe, microwaved for 2 minutes, it was perfect. Next time I’ll add a little cinnamon. Thank you!
Angie says
I’m unable to bake and don’t use a microwave. Can anyone suggest air fryer instructions please I’d be making one serving in a metal pan in 6 qt air fryer
Sara says
Hi Angie. I haven’t tried this in the air fryer. I know we have had people bake it in the oven at 350 for 20-30 minutes (until set in the middle), so I would recommend trying something similar with the air fryer. It will probably cook a little faster than in the oven.
KAREN says
I make it on top of the stove just pour a non stick pan cook on one side then flip or fold and keep moving around till it is cooked
Sara says
Sounds great! Thanks for the tip.
Becky Wilcox says
I added a bit of sugar free syrup today and a few chia seeds. Delicious
willow says
if i cut the recipe in half, would i reduce the cook time?
Sara says
Yes, I recommend reducing the cook time by 1 minute if you are making a half serving. You might have to play with it a bit since each microwave is different. There’s no harm in cooking it less and then cooking it for 30 seconds at a time until it’s set in the middle. Let me know how you like it!
Becky says
I just made this with 2 eggs, 2 bananas and 1 tablespoon of cocoa powder and its awesome! having it for breakfast!
Sara says
Ooh yes a chocolate version is delightful! I’ve made that before. Enjoy.
Jane says
Have you tried this with some other fruit instead of banana?
Sara says
Yes, I’ve tried both applesauce and canned pumpkin and both worked well.
Susan Sherman says
i make a similar one for zero points on my plan:
1 mashed banana, 1 egg stirred in to blend. i add 2 tsp unsweetened cocoa. microwave 3 minutes for a topping i use Greek plain non fat yogurt that i have stirred in 1 tbs sugar free chocolate dry pudding i use about 1 tbs of the yogurt as a frosting after it comes out of the microwave
Travis Fonseca says
Fantastic…great job!
Vickie says
This looks fantastic; however, I was under the impression that if you mashed or blended fruit then you would have to count the SP?
Sara says
Great question Vickie and you’ve hit onto one of those grey areas of WW. For sure blended into a smoothie, WW wants you to count the points for fruits. Something like this, some people do and some don’t. I personally don’t count points for this, but watch your weight loss and if you have a stall, begin to count them. Hope this helps.
Tracy says
Love it. I am a banana lover. And lately I can not stomach
any more eggs for breakfast but this has made me look forward to breakfast again.
Sara says
So glad you enjoyed it!
Mpolo says

Anne says
I wanted to try this using the oven & not microwave. Set oven to 350 degrees. I made my version of this recipe using two mashed bananas, added two eggs & thoroughly whisked together. Sprayed a 1.75 qt glass dish; poured mixture into dish. Added approx 1/2 cup fresh blueberries. Sprinkled mixture with approx 1/8 tsp each nutmeg & cinnamon. Bake 15-20 min. Very satisfying; not too wet. Next time will add (1/8 tsp each) the spices to mixture & will sprinkle (1/8 tsp each) spices on top, too. I always liked my mom’s vanilla baked custard which included nutmeg sprinkled on top. This is reminiscent of that for me without the added sugar. Your banana soufflé recipe was my inspiration. I will enjoy making this again, and will experiment with a variety of fruits.
Sara says
Oh good! I’m so glad you liked it. Thanks for the tips about how to bake it in the oven. It’s kind of like no-bread bread pudding. 🙂
Rose says
Thank you for the recipe, it sounds yummy and so easy.I appreciate that Anne gave oven temps and time. I don’t use a microwave and thought “well another recipe I can’t try” but, fortunately Anne rescued us non microwavers. Very thankful😊
Sara says
