To defrost, I would either leave them on the counter a couple hours before eating or defrost in the microwave, wrapped in paper towel, for 30 seconds at a time until warm throughout.

The taste was fine. They are moist. But if you make mini muffins, I don’t recommend baking them in the liners. They stick to the liner and they were baked thoroughly. I think I will try pumpkin bread if I make this recipe again. Thanks for the recipe.

I can only get 12 muffins when I make these. Depending on the brand of cake mix it comes out to 6-8 points on Blue. I freeze them and have one built into my snack on most days. I top it with whipped cream and frozen berries and it is delicious! So worth the points to have a little treat.
